Hickson House Distilling Co. is situated at 6 Hickson Road, The Rocks, in the heritage-listed Metcalfe Bond Stores, which was built between 1912-1916.
Hickson House dispenses distilling experiences, curated cocktails and matching menus with spirits distilled on site. The distillery’s stills and barrels sit alongside an impressive bar and dining space, overlooked by the more intimate mezzanine cocktail lounge, the High & Dry Bar.
Meet the Founders
Mikey Enright and Julian Train are the founders of the award-winning Barrelhouse Group– the team behind The Duke of Clarence and The Barber Shop.
The Barber Shop was announced as The World’s Best Gin Bar, by the UK’s prestigious Gin Magazine, in 2020. It also has been recognised as Australia’s best gin bar 4 times by Australian Bartender Magazine. It holds the largest selection of gin, and most gin aficionados have sat at the bar on numerous occasions.
Mikey and Julian are joined by Head Distiller Tim Stones, ex-Manly Spirits and Global Brand Ambassador for Beefeater Gin, where he learnt his craft of distilling under Master Distiller, Desmond Payne.
Hickson House Distilling Co. sees the culmination of the team’s combined 60 years experience and the perfect synergy of their skills in hospitality, brand development and distilling.
