Did you know

We are contributing to a more sustainable environment by using freshly shucked oyster shells from our distillery restaurant and add them to the distillation process.

The oyster shells provide natural minerals to create a smooth texture and creamy mouthfeel to the gin. We also use seaweed and old man saltbush to enhance the savoury, subtle saline and briny notes.

Ingredients:

Juniper, Coriander Seed, Angelica Root, Orris Root Old Man Saltbush, Tarragon, native Finger Lime, Ruby Grapefruit, Seaweed and Sydney Rock Oyster shells

Bright citrus with delicate ocean spray

Flavour:

Juniper and citrus, with delicate saline and subtle minerality

Finish:

Long, dry and lightly salty. Lingering herbal and mineral notes
